Some dishes are built for one occasion and nothing else. Paella isn't one of them. It works as loudly at a 40th birthday as it does at an Easter long weekend lunch, and it works just as well on a cold June evening as it does in the middle of summer — arguably better. This guide covers three of the occasions Tapas Madriz caters most often in Melbourne: birthdays, Easter, and winter events — what makes paella a fit for each, and what to actually plan for.
Every occasion below shares the same core service: Ignacio brings the pan, the burner, the ingredients and the labour, cooks live on-site, and cleans up after. What changes is the paella variety, the menu structure and the timing — covered occasion by occasion.
Birthday Parties
It removes the host from the kitchen entirely. The most common feedback from birthday hosts is relief — for once, they got to actually enjoy their own party instead of disappearing to check the oven.
It's a genuine talking point. A live paella pan draws a crowd — guests gather as the rice absorbs the stock and the socarrat forms at the base.
It scales from intimate to large. 20 close friends or 100 for a big milestone — only the pan size and guest count change.
For under 20 guests, the private chef experience (El Chef's Table) is usually a better fit than standard live paella catering, which is designed for groups of 20 and up. For 20–50 guests — the most common birthday size — paella-only or Tapas + Paella both work well. For 50–150 guests, larger milestone celebrations (big 50ths, 60ths, joint birthdays) are well within range; Ignacio scales pans and prep accordingly.
Choosing your paella: meat (Paella Montañesa), seafood (Paella del Senyoret), vegetarian (Paella de Verduras) or black rice (Arroz Negro) all work — mixed groups often go with a mixed paella to cover everyone. December and January are the busiest months for birthday bookings; book earlier if your date falls then.
Easter Gatherings
Easter in Melbourne is a proper long weekend — four days, no excuse not to gather. Easter has never quite settled on a canonical dish the way Christmas has, which means there's room to do something genuinely memorable.
Seafood is the tradition. Good Friday has long been associated with seafood, and a proper seafood paella — king prawns, mussels, squid — is a fitting Good Friday lunch, cooked live in front of guests with fresh ingredients and Spanish saffron.
It scales effortlessly for large family gatherings. A 60cm pan feeds 20 people and looks spectacular doing it — no stressing about fitting twelve chickens in the oven.
The menu: the most popular Easter setup is the full tapas-plus-paella package — patatas bravas, jamón croquetas, pan tumaca and ensaladilla rusa on arrival, then seafood paella (especially for Good Friday), mixed meat-and-seafood for Easter Sunday, or a vegetarian option. Basque cheesecake from La Viña is a popular add-on to finish, serving 12 per cake.
Book early. Easter weekend is one of the busiest weekends of the year for private catering in Melbourne — Tapas Madriz recommends booking 3–4 weeks in advance, with Easter Sunday typically booking out first.
Winter Events
There's a common assumption that paella is a summer dish. Ask anyone from Madrid or the interior of Spain and they'll tell you otherwise — the hearty mountain varieties (pork ribs, rabbit, seasonal vegetables) were built for winters Melbourne doesn't come close to.
The dish itself is built for cold weather. In winter, the meat and mixed paellas come into their own — lamb shoulder, pork ribs, chicken thighs, chorizo — with a deeper, more caramelised socarrat than the lighter summer seafood versions.
Live cooking creates warmth in both senses. The gas burner radiates heat outward as it cooks — in summer this is theatre; in winter it's theatre and a heat source. A pergola, undercover deck or patio keeps the rain off; fire heaters pair naturally alongside.
Best winter varieties: Paella Montañesa (mountain-style, Ignacio's personal winter recommendation), mixed chicken-and-chorizo paella, mixed meat-and-seafood, or Arroz Negro for something visually striking.
June and July are Tapas Madriz's least competitive booking months — corporate end-of-year events create steady demand, but dates are easier to secure than November or December. Winter is also well-suited to corporate end-of-financial-year events, sports club functions, and intimate private dinners via the private chef experience.
