How to integrate paella into your reception
Live paella works best at the reception rather than the ceremony, and fits naturally into two formats:
As the main dining experience: The paella station becomes the centrepiece of the reception, with Spanish tapas served while the paella cooks. Guests serve themselves or are plated by the chef. This works beautifully for relaxed, outdoor or semi-formal receptions where mingling is encouraged over assigned seating.
As a late-night station: An increasingly popular option is a smaller paella served after the main meal — a second wind when guests need it most. The aroma of paella cooking at 10pm has a remarkable way of reviving a party.

Outdoor and semi-outdoor venues are ideal — gardens, estates, rooftops, beach venues. We can also cook indoors provided there is adequate ventilation. We've worked across the Mornington Peninsula, Bayside Melbourne, the Yarra Valley and inner Melbourne venues including South Yarra, Toorak and St Kilda.

Outdoor weddings: Wind can affect the cooking flame and extend cooking time. For outdoor events in exposed locations, we bring windbreaks as part of our standard setup. Let us know if your venue is particularly exposed.
Practical questions couples ask
How many guests can you cater for? We cater wedding receptions from 30 to 150 guests across Melbourne. Larger events may require additional equipment and staff — discuss this at the time of enquiry.
Can you accommodate dietary requirements? Yes — vegetarian paella, seafood-free options, and gluten-free tapas selections are all available. Please advise all dietary requirements at booking. We take this seriously and ensure every guest eats well.
What's included in the wedding package? All Tapas Madriz wedding catering includes live on-site cooking, full setup and cleanup, serving equipment, and a selection of tapas alongside the main paella. Wedding packages start from $75 per person.
How far in advance should we book? We recommend 3–6 months for weekend wedding dates, especially November through March when demand is highest. A 20% deposit secures your date.
Questions to ask any paella caterer
Before booking, it's worth asking every caterer you consider:
- Is the paella cooked on-site from scratch, or transported pre-cooked?
- Do you use real Spanish saffron?
- What rice variety do you use?
- Can you provide references from previous wedding clients?
- What happens if there's a dietary requirement we haven't mentioned?
The most important question: "Will you cook it live on-site?" A pre-made, reheated paella is a fundamentally different experience. The socarrat can't survive transport, the rice overcooks, and the theatre is gone entirely.
