The Story Behind the Cheesecake

In 1990, Santiago Rivera — the owner of Bar La Viña in San Sebastián — created a cheesecake that would eventually conquer the world. He cranked the oven temperature higher than any cheesecake baker dared, let the top burn to a deep caramel, and pulled it out while the centre was still trembling. The result was unlike anything anyone had tasted before.

Word spread slowly at first through the pintxos bars of the Basque Country, then to France, then to New York, then to Tokyo. By 2020 it had swept Melbourne. But most versions you find are pale imitations — crustless cheesecakes with a light golden top, missing the signature darkness and the custard-like wobble at the heart of the real thing.

I grew up in Madrid going to San Sebastián on weekends. La Viña's cheesecake was always the reason to stay for dessert. When people at my catering events started asking about it, I knew I had to make it properly — the way I remember it from Spain.

Ignacio's version uses the same approach as the original — high heat, quality cream cheese, heavy cream and the courage to let it get properly dark.
