Arroz Negro — black rice — is a traditional Valencian and Catalan dish cooked with squid ink, which gives the rice its striking jet-black colour and a deeply savoury, oceanic flavour unlike anything else in Spanish cuisine.

A Dish Born From the Mediterranean

The origins of Arroz Negro trace back to the fishing villages of Valencia and Catalonia, where nothing from the catch was wasted. Squid ink, once discarded, was discovered to carry an extraordinary depth of flavour — briny, umami-rich and utterly unique.

The dish is built on a base of cuttlefish and squid, slow-cooked with tomato, garlic and olive oil until deeply caramelised. The ink is added to the stock, turning everything a dramatic inky black. The rice absorbs it all — the colour, the flavour, the story of the sea.
