For an afternoon party where guests arrive over a window, paella-only with snacks already at the party works fine. For an evening event with a defined start time, the tapas course gives guests something substantial while the paella develops.

Timing. For an afternoon party, a 12–1pm setup with paella ready by 2pm works well. For evening celebrations, a 5–6pm setup with tapas from 6:15pm and paella by 7:15–7:30pm is the typical structure.
